Low Carb Stir Fry

We are trying to get rid of some of our belly fat so we have cut way down on our carbs.  I love rice though and found that grating cauliflower is great in a stir fry recipe or fried rice takes out a bunch of carbs.  I found a recipe that I thought might be good and ohhhhh after tweeking it a bit it turned out to be wonderful!  I didn't even miss the rice!

Induction friendly spicy chicken stir fry "fried rice" handles those cravings for Asian food with just 6 net carbs.  This is really really good stir fry, and you could use shrimp or pre cooked steak.

Ingredients

    2 cups cauliflower (after grating)
    2 Thai chilies (I used dried pepper flakes)
    2 tablespoons sesame oil
    2 peeled and chopped cloves of garlic
    leftover  cooked chicken in strips ( I used 2 cups or so for 2 people)
    Broccoli about 2 cups
    soy sauce (about 2 tsp)
    1 beaten egg
  
Instructions

    Grate the cauliflower on the largest setting of the grater.
    Add the sesame oil and Thai chilies to the pan and heat for about a minute.
    Add the garlic and stir fry for about another minute.
    Add the chicken and Broccoli, and stir fry until the chicken is hot.
    Add the cauliflower and the remaining ingredients, including the beaten egg, and stir fry until the cauliflower is cooked      but still firm to the bite. Just a few minutes
    Adjust the seasoning and serve.

Chicken Project

Okay so this is a picture of our chicken house when we first built it.  We used part for storage and part for chickens.  After this we put a lean to on the side where the a-frame is and used the two sides for lambs and goats.  There is now a fence around our fields so we let our chickens roam.  However, when we sold our last sheep and had nothing left but chickens the possums, skunks and foxes began to appear.  We now have no chickens left.  What a bummer.  I never thought of sheep as being a guardian animal, but the timing suggests that they were.

Before we get ANY animals again we are going to re-think everything. We will make an enclosure with chicken wire coming off of this chicken house on the side where the junk is, and the other side (which is now a 3 sided lean to) will become a place to store the lawn mower.

I have found that homesteading is a never-ending and changing process.  Many websites I have visited say the same thing.  Improvements and additions are just a part of learning.  So anyway, there will be photos of our project when we begin.

Pop-up camper

We have been avid tent campers for many years, but now that we have gotten older it's hard to get up off the ground even with air mattresses! So, we took the next step and got a pop up!

Up-Cycled Feedbag Totes

It is so hard to throw away these feedbags!  They are made of a plastic material and are super strong.  I found a way to make them into tote bags and use them all the time for everything! I have combined several different techniques from sites on the web and keep making them better all the time.
